Milk cake

 


 

 

Today we will make Milk Cake.

 

Milk

Sugar  

Ghee

Citric Acid

You can take Lemon Juice/Alum instead of Citric Acid

Full Cream Milk - 2 liter

 

Take an iron pan, grease Ghee in it. Stir it continuously till it boils

You can take Milk & Mawa - 1 kg/200 gram

Turn the flame to medium and let it boil until the milk is halved

Put Citric Acid - 1 pinch

Take a steel, aluminum vessel

Grease it with Ghee

Put Sugar - 250-300 gram

 

Keep the flame full & put the Sugar in this way

 Put the Sugar gradually  

Gas flame will remain full  

Stir it  

Put the remaining Sugar in it & cover it, stir it

Scrap it from the sides

Now we will put Ghee

Put the Ghee gradually  

Stir it continuously  

Turn off the flame

Put it in the vessel immediately

Put the warm cloth

Cover it with a plate  

Cover it with the warm cloth

Cover it for 7-8 hours

Cut it in slices.

 

Crispy Samosa Recipe

 


 

 

Today we will make Samosas

Take All Purpose Flour - 1+1/4 cup/ 200 grams

Keep some of the All Purpose Flour in a bowl

Put Salt - 1/2 tsp

Carom Seeds - 1/2 tsp

Ghee/Oil - 3 tbsp

Take Lukewarm Water for binding the dough

Mix it

 

It should be bind like this  

Bind it by adding Lukewarm Water

Bind the dough tightly

Cover it & give it rest for 15-20 mins

Now we will make Samosas Filling

 

Take some commonly used Spices

Take Potatoes - 4 big & boiled

Coriander Leaves

Green Chilies

Take a Masala

Fennel Seeds

Coriander Seeds

Cumin Seeds & Red Chili

Crush them coarsely

 

Take a pan

Put Oil - 2 tsp

Asafetida - less than 1/4 tsp

Put Masala - 1 tsp

Green Chilies

Red Chili Powder - 1/2 tsp  

Turmeric Powder - 1/4 tsp  

Garam Masala - 1/4 tsp

Cumin Powder - 1/2 tsp

Coriander Powder - 1/2 tsp

Salt - as per taste  

Roast them all

Put Sugar - 1/2 tsp

Gram Flour - 1 tsp

Roast the Gram Flour for 2-3 mins

Put Water - 1-2 spoon

 

Put boiled & crushed Potatoes

Garnish some Coriander Leaves

Turn off the flame

Let it for cooling down

Take out some All Purpose Flour on a plate

Knead the dough

Make dough balls

Keep the dough balls in a bowl

Take a dough ball

Wrap it with All Purpose Flour

Roll it

Take some Water in a bowl

Roll it in oval shape like this

Dip the Knife in water

 

Cut it in 2 parts  

Take one part  

Apply Water on the edges  

Fold it like this

Fill the filling

Apply water on the edges

Pack the Samosa like this

Make Samosas in this shape

 

In the same way, make more Samosas  

Always fry 4-6 Samosas at one time

Oil should not be too much heated

Put Samosas for frying  

Here I am frying 8 Samosas  

4 more Samosas can be made from the remaining mixture  

With 200 grams of all purpose Flour, 12 Samosas will get ready

Fry the Samosas on medium flame

Samosas will remain crispy for long time

You can reheat the Samosas on Tawa or in OTG

Samosas are ready.
