First we will make the dough for Gol Gappas, Take 1 cup of suji in a bowl

 

Add (1/8) 2 tbsp of all-purpose flour

1/2 tsp of salt

1/8 tsp means 1 pinch of baking soda

Now Mix it well

 

When it's done mixing add water gradually. We will make medium soft dough. First mix it with a spoon after adding water. Now stop using the spoon and knead the dough with hands and make soft medium dough.

 

It is important to note that when you are kneading the dough it will be soft at first and will become hard after some rest. You have to handle the dough well make it soft first, suji expands so handle it well, Knead the dough properly then put it aside.

 

So here I have done kneading the dough. It just looks like the normal flour dough. See the texture It doesn't look like the dough is made up of suji. Now put the dough into the same bowl, apply some water, cover it with a cloth and give it a 15 minutes rest.

 

15 minutes are up now but the dough is still medium soft. If you follow the exact recipe yours too will look like this, and Gol Gappas too will turned out good. Dust the counter with flour. Now roll the dough. We have to make it thin.

 

It will not become crispy if you make it thick. That will be the main reason if your Gol Gappas are not turning out good. You have to make it thin, See It's done now. Take a round cutter. Cut it in round shape. There will be so many Gol Gappas made with only 1 cup of suji, You should count. Cut like this.

 

Take the extra dough out now. See there are so many of them. Make more from the sides we took out. Cover Gol Gappas with a cloth or plastic bag, don’t let the air in, It will be better. Now take 4 to 5 and fry them, I have already preheated the oil at low flame.

 

Oil must be preheated well and the temperature of 160 degrees. Fry the Gol Gappas like this, Oil must be very hot. Let me show you how to fry, first take Gol Gappas and dip it in the oil and press it with the ladle. Dough will rise and come up. Just follow what I'm saying.
